“I created this Moscato in the same manner as the genuine Piedmontese Moscato that I grew to appreciate whilst working in Italy. Clearly I took some liberties given the eye catching pink fleshy blush! I sourced the best Muscat Blanc à Petits Grains grapes I could find, harvested at the first sign of that distinctive floral musky punch. The fruit was handled as gently as possible aswas the juice in order to retain as much aromatic fruit character as possible. Cold fermentation in pressure tank further enhanced these unique volatile characters with the ferment arrested at the traditional 5.5% v/v alcohol (permitted by law for traditional Moscato D’Asti). Being a tank ferment the spritz in the bottle is that created from the ferment in turn giving distinct mouth feel and texture. I am sure it will be a very popular little gem, especially come summer time. Salute!”

Fresh, floral aromatic notes comprising scents of exotic musk and lemon blossom with a hint of Turkish delight.


Vibrant and delightfully delicate palate of wild strawberry, rosewater come Turkish delight immersed in a luscious mouth coating, foamy, meringue like mousse. An attractive line of lime sherbet acidity entwined through the palate perfectly balances the lavish sweetness whilst effortlessly extending into the supple ruby grapefruit finish.

Food Matching

Perfect aperitif, especially in summer and ideal for brunch. Also well suited to fresh fruit, a pavlova with fresh strawberries and cream or more adventurously Zabaglione with grilled stonefruit.

Winemaker Tim Burvill

Growing up in Western Australia, Tim's interest in wine was sparked at a young age by frequent summer holidays to the Margaret River wine region. This passion eventually saw him move to South Australia, where he completed an honours degree in winemaking at Adelaide University's Roseworthy Campus.

His first job out of university was with Southcorp, which as Tim puts it "was the best start to a winemaking career that anyone could ask for." His role as winemaker saw him make wines in regions as diverse as the Barossa Valley, Coonawarra, the Sunraysia and the Riverland. A rapid rise through the winemaking ranks soon saw him vested with the responsibility at the age of 25, of making Southcorp's ultra-premium white wines, including Penfolds Yattarna.

In 2001, Tim decided to follow his own path and began RockBare, focusing on Chardonnay and Shiraz from South Australia's McLaren Vale.


South Australia's first vineyards were established in the 1830's. Enjoying a wide range of climates including the cool temperatures of the Adelaide Hills, to the hot summer weather of the Barossa Valley, South Australia is arguably Australia's most diverse wine producing state.

It is from these wonderfully diverse regions that Tim Burvill selects the best varietals to produce Mojo wines. Mojo wines are in keeping with Winemaker Tim Burvill's power-packed fruit driven style.

Mojo was once referred to as a magical charm or amulet containing special powers. It was these supernatural powers that protected from evil or crossed conditions and evoked the bringing of good karma.The secret of our Mojo lies in its ‘magnetism’, with funky branding and great wine.
