“The inaugural release and an exciting one to boot with this Cabernet Sauvignon slotting nicely into the Mojo range. Born from a very trying vintage this inaugural release established itself out of the wettest harvest in 37 years. Tireless work and great vineyard management ensured this fruit came through unscathed and more importantly for us, displaying both regional and varietal characteristics. Cold soaking, long slow ferments, extended maceration post ferment and some seriously good subtle oak has enabled the hard work done in the vineyard to shine. Winery Tasting Notes
Varietal herbaceous mint, briar, tomato leaf, blackcurrant, dusty cigar box and a hint of sweet toffee.
Vibrant and youthful palate of blackcurrant pastille, wild berries and a lick of fresh stalky high notes meld with dark chocolate, a savoury touch of black olive and hints of nutmeg and cassis. Ubiquitous, taut acid and cedary oak provide a supportive backbone both
bestowing structure to hold the palate together then deftly amalgamating with the ample, supple tannin providing a lengthy, dry, chalky finish.
No brainer for a pink roasted leg of lamb with traditional mint sauce or use the same accompaniment with the less formal BBQ’d lamb
cutlets...in short lamb and mint are perfectly suited.
