This vineyard shows promise. A very old selection of Pinot Noir material from Best's oldest vines. Planted on a west facing slope with very low water supply, and hence very low crops. Grapes are hand picked and sorted before cold maceration with 100% whole bunches. After the fermentation starts naturally, yeasts are added and the must is worked by foot over many days, allowing the temperature to rise above 32*C at its peak. The wine is pressed to barrels to finish fermenting. Full malolactic fermentation takes place in oak and the wine is kept on lees for a considerable time before one gentle racking.

Winery Tasting Notes
Garnet red with dark red hues
Pure Pinot noir fruit nose with cherry and plum flavours, subtly perfumed red berries and hints of game.
Supple tannins and typical red fruits on the palate, wine shows good poise and length of flavour. Will develop spice and complexity with time in the bottle.
