Harvest timing of Cabernet Sauvignon is critical so as to assure balance of flavour and optimum tannin ripeness. Handled individually in small parcels, the fruit was carefully monitored throughout fermentation to ensure the preservation of fruit characters and ensure only the finest tannins are extracted. Upon completion of primary fermentation, each batch is transferred to French oak for maturation over the ensuing 16 months. Careful grading of all barrels ensures that the final blend delivers the most balanced and expressive example of the variety.
