Winery Tasting Notes

Colour

The colour is a lively pale green / yellow.

Aroma

A hint of forest fl oor leafi ness lifts the typical lemon-like aromas of Semillon.

Palate

The combination of wild yeast and barrel fermentation gives a palate with real harmony: a soft peachy creaminess balancing the high acid of ripe grapefruit.

Cellaring Potential

Easily approachable when young and with 2-5 years cellaring develops butter and straw characters typical of high quality aged Semillon.

Winemaking Notes

The grapes were hand picked, crushed, chilled and drained immediately. Only the first free-run juice was reserved for this wine. 50% of the juice was run into new Francois Freres barrels, from the French forest of Allier, for fermentation with wild yeast and then aged on lees for 12 months. The balance of the juice was cold fermented in stainless steel tanks.
