Overview

The wine takes its name from a 40 metre long man-made cave, hand-dug in 1916 into the solid limestone hill that is now home to the estate vineyards. The hut-like entrance to the Lime Cave is depicted in the Maxwell of McLaren Vale logo. Above this cave, on the crest of the hill, there are 19 rows of “Reynella Selection” Cabernet Sauvignon vines. Planted in 1972, these vines originate from those brought into South Australia by John Reynell over 150 years ago.

Winery Tasting Notes

Colour

The colour is dense red-black.

Aroma

Aromas of cassis and mulberry are complemented by dried herbs with hints of cigar box and tobacco notes.

Palate

The palate offers abundant dark cherry and blackberry with a luscious compote of dark forest fruits. Subtle dried herb notes and a light earthy character follow. Maturation in French oak provides a well balanced cedary note. Tight fine tannins persist and provide excellent palate length.

Cellaring Potential

Given satisfactory cellaring conditions, it is expected this wine will drink particularly well at around 6 to 8 years of age. Previous vintages of this wine have performed exceptionally well in the winery’s cellars beyond 10 years.

Since 1979, family owned Maxwell Wines, with its forty acre estate vineyard, has built a reputation for producing hand made, rich and robust reds that combine exquisite fruit quality with structure and finesse. The signature Lime Cave Cabernet and Ellen Street Shiraz are acclaimed for their cellaring potential and purity of expression. The white wines achieve freshness and superb varietal character via slow, cool ferments that capture the delicacies of the grapes.

Their estate vineyards are some of the most favourably positioned in the McLaren Vale district. Situated on solid limestone, in proximity to the moderating effects of the Gulf of St Vincent, the conditions in the vineyards are ideal for producing small quantities of intensely flavoured grapes.

The oldest vines on the property were planted in 1953, directly below where the Winery now stands. Known within the Winery as the "Max Flat Block", these Shiraz vines always produce some of the best fruit on the estate, providing the base for the Ellen Street Shiraz. This block consists of alluvial red-brown clay over limestone, and is typically one of the earliest ripening Shiraz blocks in the region.
