The aim for this Chardonnay is to retain a fresh structure rather than producing a wine that is too broad. They therefore minimised the malolactic fermentation so that it is really the vineyard, fruit, wild-ferment and barrel characters that make up the complex nose and palate.

The 2012 Twin Valleys Vineyard Chardonnay starts off with notes of yeast extract and roasted nuts then gives way to an aromatic core of warm apple tart, dried apricots and honeydew melon. Full-bodied, rich and loaded with tons of nutty, yeasty, spiced-apple flavors, it has a very crisp acid line to lend lift on the long finish. Drink it now to 2017.
