Winery Tasting Notes

Deep, purple colour.

It has an intense vibrant aroma of blackberry, lavender and spice.

The soft palate has a core of dark blackberry fruit all enhanced with an underlying savoury spice, hints of pepper, vanilla and blackcurrant leaf. The cool climate mid palate structure retains an elegant balance of intense fruit and integrated tannins. The long persistent finish has additional background notes of clove and spice. The Mount 0 Degrees Shiraz is a true embodiment of cool climate Shiraz with all the elegance and finesse that you come to expect from this perfect marriage of variety and climate.

Food Matching

This classic style is particularly suited to lamb, grilled meats and roast duck.

Winemaking Notes

After crushing and de- stemming, the fruit was fermented in small open fermenters at 24 degree Celsius and pumped over 3 times daily for 8 days to extract colour and flavour as well as helping control the temperature of the ferment. The wine completed malolactic fermentation in tank before being filled to 30% new European oak. Final maturation occured for 6 months in oak before bottling.
