Margaret River Semillon is very distinctive and at Juniper Estate the aim is to produce a fine elegant complex wine with medium term cellaring potential from this wonderful variety. The use of “free range” yeast, barrel fermentation in tight grained French oak and maturation on yeast lees are used to build texture and structure along with a touch of smoky complexity without dominating the fruit characters and maintaining elegance in the wine.
- WA - Margaret River
- Western Australia
Barrel-fermented, 50% with wild yeast, 50% inoculated, matured for 10 months in French barriques (33% new). Juniper seems to keep a low profile in the Margaret River, content with letting its wines do the talking. Here the refrain is of elegance, purity and balance, a testimonial to the cleverness of controlling and balancing all of the inputs, ending up with a semillon that waits until the finish and aftertaste to explode into life (and lingering flavour).
