The combination of my aim to produce a dessert style wine with a point of difference and the fact that Margaret River generally does not experience the right weather conditions to make good botrytis style wines lead to the cane cut style. It is a wine that is not overly cloying and balanced with crisp clean acidity, so that it can be enjoyed either at the beginning of the meal with a terrine or pate or at the end lighter dessert styles. Enjoy now and for the next 5 to 8 years.
Made from the Estate Riesling vines planted in 1973, the fruit bearing canes were cut when the flavours in the grapes were at their optimum. The grapes were then left out hanging on the vines to dehydrate for about 3 weeks, thus concentrating the sugar (17.5 Be), acid and flavour.

Winery Tasting Notes
Golden straw in colour
The nose has a floral citrus blossom lift along with fruit characters of lemon, lime, pear and apple with a hint of marzipan and vanillin oak.
The palate is juicy sweet and smooth, flavours of creamed honey and nuances of marmalade like bitterness finishing with a crisp clean mouth feel.
Try with an exotic fruit platter or drizzled over your favourite ice cream.
Enjoy now and for the next 5 to 8 years.
