At Juniper Estate the aim is to produce a fine elegant complex wine with medium term cellaring potential from this wonderful blend of varieties. The use of “free range” yeast, barrel fermentation in tight grained French oak and maturation on yeast lees are used to build texture and structure along layered complexity without dominating the fruit characters and maintaining elegance in the wine.

Winery Tasting Notes
Complexity and intensity are the first impressions of this barrel fermented and aged white blend with characters of cinnamon, lemon curd, bees wax, brioche, oyster shell, apple, pear skin, almond meal, smoky vanilla and grapefruit to name a few. The finely structured palate is smooth, succulent and layered with a core of citrus and pear fruits, mouth watering saline like mineral acidity along with barrel complexities of almond meal and a long finish.
