With the combination of Margaret River’s climate and soils there are many similarities between Bordeaux and here. Hence it is not surprising that the blending of Sauvignon Blanc and Semillon works so well. At Juniper Estate we are aiming to produce a fine elegant complex wine with medium term cellaring potential from this wonderful blend of varieties. The use of “free range” yeast, barrel fermentation in tight grained French oak and maturation on yeast lees are used to build texture and structure along layered complexity without dominating the fruit characters and maintaining elegance in the wine.

A 60/40% blend of sauvignon blanc and semillon, wild yeast barrel-fermented, matured for 10 months in French barriques (25% new). Yes, this is a blend that Margaret River produces so well and so consistently, but this wine adds a further dimension to the blend; it is at once intense and complex, yet with finesse and elegance; the oak, wild yeast, lees, sauvignon blanc and semillon all run in a seamless stream of bright flavour. Winery Tasting Notes
Complexity and intensity are the first impressions of this barrel fermented and aged white blend with characters of cinnamon, lemon curd, bees wax, brioche, oyster shell, apple, pear skin, almond meal, smoky vanilla and grapefruit to name a few.
The finely structured palate is smooth, succulent and layered with a core of citrus and pear fruits, mouth watering saline like mineral acidity along with barrel complexities of almond meal and a long finish.
This wine will cellar well for at least 10 years.
