Winery Tasting Notes
The nose shows dried spice with lifted notes of black plums and a black pepper lift.
Delicate plum and black pepper carries through to the palate. Velvet tannins from the cool growing season gives great persistence and length. 12 months in predominantly French Oak delivers a layer of fruit and textural spice.
Hand harvested from the Fischer Vineyard the fruit was crushed and destemmed into open top fermenters. After 36 hours cold soak to release colour and tannins the ferment was hand plunged 4 times a day for 8 days. At 2’Be the wine was pressed to 30% new oak casks. After 12 months maturation the wine was gently finned with egg whites, filtered and bottled.
