Vinification and Maturation
The grapes are de-stemmed and crushed to static fermenters. Fermentation is commenced using an active yeast culture. The grapes are pressed at the right balance of colour extraction, alcohol and unfermented grape sugars.
The ferment is then stopped with the addition of grape spirit and the resultant fortified wine then settled and racked to cask. Following maturation in oak casks for a number of years the wine is then blended with other vintages to give an average age of five years.
