Overview

Following traditional French winemaking methods our Evolution as the name suggests is left entirely to nature. Sauvignon Blanc from our single vineyard site is handpicked at harvest, gently crushed and the juice is pressed off to a holding tank for 48 hours to separate the clear juice from the settled lees. The juice is then “racked” to old French oak barriques for primary fermentation. All of the barrels are left to ferment naturally. The fermenting barrels are placed in a temperature controlled storage area where the primary fermentation process is monitored until complete. After primary fermentation is complete the barrels are literally stuck in the corner of our barrel hall and left to evolve for 18 months. (periodic battonage or lees stirring occurs during this 18 month maturation)

Winery Profile

Brand Profile Image

Truly great wine results from a partnership between the land and the people who nurture it. At Helen’s Hill Estate our 100% family owned vineyard and winery carefully balances traditional values and modern efficiencies to make exceptional cool climate wines.

Our vineyard and wine making philosophy is quite simple: The land and the fruit are in charge – we do all the labor. We are situated off Ingram Rd (not hard to figure out how we came up with the name for one of our ranges of wine) which runs along the southern ranges of the renowned Yarra Valley and we took our name from the late previous owner.

Comprising 150 acres (110 under vine) the vineyard includes 140 seat restaurant (with some of the finest views of the scenic Yarra Valley), Cellar Door, extensive lawn bushland area for our festivals (or just lazing the day away) and state of the art winery.

We take the preservation of our environment very seriously and rely entirely on what falls out of the sky to irrigate our vines. We re-use all restaurant and cellar door waste waters and re-use all winery waste water. In the vineyard we rely heavily on nature and have promoted the growth of certain types of plants. The benefits are two fold; provide a source of natural fertilization to the land as well as attracting certain insects to take care of unwanted pests. Through this process of selective plantings in the mid rows we have dramatically reduce our reliance on fertilizers and sprays.
