Overview

Appellation: Chablis A.C., Bourgogne

Our Chablis come from parcels situated beside the village of FONTENAY-Près-CHABLIS, at the very heart of Chablis’ vineyards.

On high plains or steep hills, all our Chablis grow on stony soils (Kimmeridgien Limestone) which allow a moderate production.

Most of our vineyards are between 15 and 20 years old. And following the 2005 harvest we exploit a vineyard that has more than 40 years of age (planted by our great-grandfather). We will elaborate a Chablis Vieilles Vignes vintage from this.

Winery Tasting Notes

Colour

An attractive bright, yellow with seemingly a slight green tinge (but probably my imagination).

Aroma

The nose contains light pretty floral notes.

Palate

The palate proudly displays the classic characteristics of great Chablis, being crisp almost flinty with generous helpings of minerality combining with lashings of fresh grippy acidity.

The body of the wine displays light structural fruit tannins alongside citrus notes and a touch of marmalade zest. Harmonious and balanced.

Serving Suggestion

An ideal wine to serve chilled with a dozen Sydney Rock oysters.

Fèvre families have been working at the heart of Chablis vineyards since 1745.

Impassioned by the past generations of vine grower’s work, Gilles’ objective is to transmit their philosophy and respect their heritage. He uses minimal vine intervention and, when required, environmentally-friendly techniques so that the authenticity of the soil can express itself both naturally and fully.

Wine-making method

Nathalie takes care of the winery. In 2004 they built a winery and cellar in order to vinify all the grapes coming from their domain themselves. This cellar is composed of small thermo-regulated stainless steel tanks (from 20 to 50 HL); these high-tech tanks give Nathalie the ability to vinify each parcel separately. Both are important factors in controlling and maximizing the quality of the grapes.
