Lovers of good wine are full of praise for the 2011 Dominique Portet Fontaine Shiraz/Cabernet Sauvignon/Merlot blend. Delicate in taste and perfume, this years release comprises 50% Shiraz and 30% Cabernet Sauvignon and 20% Merlot with grapes sourced from both the Yarra Valley and Pyrenees regions, where they were handpicked, destemmed and gently crushed.

Following this, the parcels underwent a three day cold soak, were carefully fermented and then left on skins for two to three weeks, with 80% aged in French oak barrels, and 20% aged in tank to retain vibrancy.

Winery Tasting Notes

The focus of this wine is fruit, light red cherry aromatics and a floral lift.

A round, soft structure in the mouth. This is a wine to drink now but will age for the medium term if patience insists.

Winery Profile

Red 5 Star Winery - James Halliday, Australian Wine Companion 2013

Dominique Portet was bred in the purple. He spent his early years at Chateau Lafite (where his father was rgisseur) and was one of the very first Flying Winemakers, commuting to Clos du Val in the Napa Valley, where his brother was winemaker. He then spent over 20 years as managing director of Taltarni and Clover Hill in Tasmania. After retiring from Taltarni, he moved to the Yarra Valley, a region he had been closely observing since the mid 1980s. In 2001 he found the site he had long looked for and in the twinkling of an eye built his winery and cellar door, planting a quixotic mix of viognier, sauvignon blanc and merlot next to the winery. Son Ben is now executive winemaker, leaving Dominique with a roving role as de facto consultant and brand marketer. Ben (30) has a winemaking CV of awesome scope, covering all parts of France, South Africa, California and four vintages at Petaluma. Exports to Canada, The Netherlands, Denmark, Dubai, Hong Kong, Singapore, Malaysia, China and Japan. James Halliday
