Expert Reviews

A blend of pinot noir and chardonnay grown in the Yarra Valley, and fermented in this bottle; bright pale pink, it has most attractive strawberry fruit flavours, with very good length; the LD signifies light dosage (ie lesser than normal sugar added to the wine after disgorgement). It all works perfectly to result in a wine for all seasons.

Rating 94 - James Halliday, Australian Wine Companion (SEP/2011)

Winery Tasting Notes

Winemaking Note

The current Brut Rosé release is a blend of 60% Pinot Noir and 40% Chardonnay, made in the traditional method and sourced from fruit grown in the Yarra Valley. The grapes were handpicked, gently pressed and fermented before going through the secondary fermentation inside this bottle. Following this, the wine was aged for two years inside our cellars, then disgorged and lightly dosed prior to release.

It is a savoury sparkling wine with fresh strawberries and rose petals on the nose that follows into a fresh, dry, creamy finish.

“The key to the elegance and crispness is spice, strawberry, apple, all folded into the palate, fresh and dry" 94 points James Halliday, Top 100, Weekend Australian

Winery Profile

Red 5 Star Winery - James Halliday, Australian Wine Companion 2013

Dominique Portet was bred in the purple. He spent his early years at Chateau Lafite (where his father was rgisseur) and was one of the very first Flying Winemakers, commuting to Clos du Val in the Napa Valley, where his brother was winemaker. He then spent over 20 years as managing director of Taltarni and Clover Hill in Tasmania. After retiring from Taltarni, he moved to the Yarra Valley, a region he had been closely observing since the mid 1980s. In 2001 he found the site he had long looked for and in the twinkling of an eye built his winery and cellar door, planting a quixotic mix of viognier, sauvignon blanc and merlot next to the winery. Son Ben is now executive winemaker, leaving Dominique with a roving role as de facto consultant and brand marketer. Ben (30) has a winemaking CV of awesome scope, covering all parts of France, South Africa, California and four vintages at Petaluma. Exports to Canada, The Netherlands, Denmark, Dubai, Hong Kong, Singapore, Malaysia, China and Japan. James Halliday
