Selected parcels from vineyards in the Wairau and Awatere Valleys were harvested and fermented separetely.
A long cool fermentation took place over 4 weeks, with the parcels then being blended and stabilised prior to bottling.

Bright, light straw yellow colour, pale on the rim. This has a tightly bound, slender nose with cool-spectrum cut grass, nettle, gooseberry and green capsicum aromas. This aromatics are fresh, cutting and show intensity. Dry to taste and lightmedium bodied, the palate is tight and sleek with flavours of grass, nettles, green apples and gooseberries. This has good depth and a positive linearity, with driving, lacy acid cut. Fine, drying phenolic textures emerge and carry the wine to a light, grassy finish. This is a light, refreshingly crisp, cool-spectrum, thirst-quenching Sauvignon Blanc. Serve as an aperitif and with seafood over the next 18 months to 2 years. Raymond Chan
