After hand harvesting, the bunches were destemmed into small fermenters. Traditional warm fermentation followed, peaking at 35°C, using a mixture of hand plunging and pump-over techniques. Afterwards, the wine macerated on skins for optimum integration. The finished batches were pressed off and racked to French barriques. Malolactic fermentation occurred in barrel, followed by 14 months of maturation.

Winery Tasting Notes
Complex single-vineyard wine with floral, spicy notes supplementing rich fruit and oak characters.
The palate is supple, silky and elegant with a core of fine fruit tannin leading to a long finish.
An excellent match to smoked duck breast, blood orange and roasted pecan salad, or dukkah crusted lamb noisette served with arugula salad and strawberry vinaigrette.
