The fruit was gently harvested and immediately pressed off to produce pure, low-phenolic juice to give the wine superior ageing potential. We fermented individual batches using different yeast strains to enhance the complexity. To add more texture, a small portion was fermented in old barriques. Fermentation was stopped by chilling, ensuring a refreshing balance of sugar, acid and flavour. The wine spent the winter on lees to further enrich the palate weight and texture.
