The winery is a blend of age old, proven techniques and some equipment which is state of the art. The press, de-stemmer/crusher and refrigeration system were bought brand new so they are sure of their ability for performance and reliability. The use of gravity ensures they are not over reliant on machines and we believe they have the right balance to maximise quality.

Winery Tasting Notes
Pale straw with green hues.
Typical Porongurup Riesling bouquet, with intense lime juice backed by a beautiful fragrance of orange blossom and fresh flowers. There are hints of lavender as well as passionfruit, giving a bouquet that is zesty and fresh, yet also of great depth.
The lime juice characters again dominate and run the length of the palate, providing generosity and succulence. The core of the wine is the natural acidity, creating great structure, finesse and length for the wine. The balance between the fruit generosity and tight acid structure is the hallmark of Castle Rock Rieslings. Lively, crisp and with an attractive delicacy now, this wine will blossom with age for at least fifteen years.
Ideal aperitif wine, will also accompany fish, delicate crustacean and mild Asian dishes.
