Winery Tasting Notes
The appearance is inky black with layers of purple and crimson on the edge.
The bouquet carries the aroma of ripe red berries, dark chocolate and obvious oak with layers of mocha and vanilla spice. It’s full and robust with the unique characters of the Barossa Valley floor vineyards.
The palate is lovely and full with generous layers of dark fruits, chocolate and molasses with the savoury kick of smoky bacon black olives and licorice. I’ve used a combination of medium toast oak for mocha richness and old barrels for gentle oxidation which allows the tannins to soften without losing the robust mouthfeel. The mid palate is solid and round with a fleshy texture that builds toward the back palate with a hint of eucalypt and coffee.
Prime Angus rib eye steaks dry aged for over 30 days seems to be all the rage at the moment. I agree that the flavours are sensational and a perfect match for this Shiraz with a good rich sauce on those special occasions. We love it with BBQ lamb chops or herb crusted rack.
This Barossa Shiraz will cellar for as long as you are prepared to look after it. In return, every time you open a bottle, it will look after you!
