Winemaking Notes
The grapes were sourced from vines aged between fifteen and thirty four years. The various vineyard parcels were harvested and fermented separately to ensure that each parcel articulated the unique character of each vineyard site. All ferments were left on skins for a minimum of 7 days. During the subsequent eighteen month oak maturation period each individual batch of barrels was racked and returned periodically, to seamlessly integrate the tannins into the wine and to ensure that minimal filtration and no fining was required prior to bottling.
A leading medium-sized winery in the region. In 2000 Chapel Hill was sold to the Swiss Thomas Schmidheiny group, which owns the respected Cuvaison winery in California as well as vineyards in Switzerland and Argentina. Wine quality is as good, if not better, than ever. Winemaker Michael Fragos was named Winemaker of the Year at London's International Wine & Spirit Competition '08. The production comes from the estate plantings of shiraz, cabernet sauvignon, chardonnay, verdelho, savagnin, sangiovese and merlot, together with purchased grapes from McLaren Vale. Exports to all other major markets.
