Grape Varietal

Savagnin is a grape variety that is grown almost exclusively in the Jura region in Eastern France. It is a variety that produces a range of wine styles and is renowned for its aromatic qualities and ability to age well.

The 2009 il Vescovo Savagnin displays layers of orange blossom and nectarine flavours underpinned by a mineral and zesty palate that is enduringly pure.

Food Matching

This style of Savagnin makes for the perfect aperitif as well as a great food wine – the perfect foil for rich creamy dishes such as risotto with pan-seared prawns.

Winemaking Notes

We decided on a minimal intervention philosophy with Savagnin as we were keen to explore its varietal personality and charm. Savagnin grapes have thicker than usual grape skins and these skins concentrate the desired varietal characteristics. For this reason the hand harvested grapes were gentle crushed, chilled and then skin contacted in the press for 4 hours to encourage the extraction of these opulent and textural fruit flavours. A cool ferment was followed by storage for 4 months on yeast lees.

A leading medium-sized winery in the region. In 2000 Chapel Hill was sold to the Swiss Thomas Schmidheiny group, which owns the respected Cuvaison winery in California as well as vineyards in Switzerland and Argentina. Wine quality is as good, if not better, than ever. Winemaker Michael Fragos was named Winemaker of the Year at London's International Wine & Spirit Competition '08. The production comes from the estate plantings of shiraz, cabernet sauvignon, chardonnay, verdelho, savagnin, sangiovese and merlot, together with purchased grapes from McLaren Vale. Exports to all other major markets.
