Each variety was processed separately, and handled very carefully to ensure maximum flavour retention. Harvesting occurred at night when temperatures were very low, and only the finest portions of the free run juice were used. After clarifying the juice, fermentation was carried out at temperatures around 12°C until dry. Blending proportions were decided to ensure the best balance to highlight

A fresh zingy palate alive with flavours of citrus and gooseberries, finishing with limey richness and a hint of apricot from the Verdelho. Clean and crisp and with a long palate ensuring lingering attraction.

All fruit for Cape Barren Old Vine Shiraz is sourced from a single seventy year old vineyard at Blewitt Springs that has previously been used to produce some of South Australia's icon wines.
