Winery Tasting Notes
The nose shows lifted lemon curd, with hints of biscuit and nougat.
The palate has varietal expression complemented by restrained fine oak and a creamy textural mouthfeel. This generosity on the palate is tempered by a fine acid structure giving the wine great length and persistence.
The Chardonnay juice was barrel fermented and matured in French oak for 12 months and during this time we stirred the lees (bâtonnage) to provide added complexity.
The wine is delicious to drink now, however it will develop more complexity with age.
Serve slightly chilled and pair with white meat such as pork, poultry and veal. The wine will also compliment oily fish such as salmon and tuna.
