Baxter Estate 2008 Pinot Noir was harvested form vineyards planted predominantly on silt soils. These vineyards tend to produce wines with excellent weight and bright red fruit flavours, which are fruit-forward and approachable in their early years. The vineyards are managed in a way that promotes early ripening through rigorous crop control.

Winery Tasting Notes
Medium red in colour with shades of purple at the edge.
The aroma is bright and lifted with hints of red cherry, toasty oak, and mushrooms.
The palate is fleshy with ripe red fruit and coffee bean overtones. Barrel-aging has enhanced the spicy notes of this wine.
Traditional wine making practices have been employed in the production of this wine to emphasise the textural notes and to enhance the complexity of aroma and flavour. Fermentation temperatures were warm to encourage the wild yeast to dominate. The wine pressed early so that secondary fermentation occurred in barrel.
