Winemaking Note

The peak is fermented slightly warmer than our other wines with a small percentage of the juice going through a wild fermentation. This gives a more European influence to the wine and promotes greater complexity. After fermentation great care is taken in the blending of the different parcels so that no single attribute dominates.
