2003 was a hot dry vintage resulting in one of the smallest Hunter yields in a very long time. Shiraz production was small but with excellent concentration. This is a wonderfully rewarding wine with bold and rich fruit characters up front with an elegant, stylish palate.

Mid to deep ruby red with hues of mahogany and brick red edges.


It has an evocative bouquet of violet petals and the unmistakable Hunter character of smoked meats and leather. It has developed mocha, dark chocolate and chary elements.


At 10 years of age this Hunter Shiraz is showing lovely developed characters. It has charry briarwood, clove and stewed black cherries. The oak has hints of vanilla and spice. The alcohol, tannins and acid are well balanced and finely structured and the finish is delicate, dry and restrained with an earthy, savoury twist.

Food Matching

This Shiraz is a perfect complement to tender veal, slow cooked lamb shanks, Osso Bucco or spicy German sausages

Cellaring Potential

This wine started to come together in 2008 and has continued to improve over the last 4 years. It’s now showing a level of complexity akin to some of the great Hunter styles.

Pan Terra “Rare” is simply that, a limited collection of unique hidden gems. Individual wines that have been reserved for release as mature, bottle aged Australian classics. Crafted from premium Hunter Valley vineyards this wine has been stored under ideal cellaring conditions and has remained undisturbed since bottling. The natural chemical reactions that occur during the aging process add new aromas, flavours and textures. The primary fruit characters of youth are transformed into complex developed forms adding an extra dimension to the appearance, bouquet and palate. What makes it unique is the early harvesting of the berries when they are relatively low in sugar but high in natural acidity. It’s these characteristics that allow the wines to develop the distinctive “buttered toast” and honey flavours with maturation over many years.
