Winery Tasting Notes
The colour is an intense inky black with hues of dark purple and garnet.
The bouquet is powerfully intense with smoky bacon, heady alcohol spirit and luscious plums and mulberry fruit. It’s bursting with licorice, anise and earthy spices that jump out of the glass.
On entry the palate is overwhelming with luscious ripe berries, dark cherries and plums. There’s a big hit of clean vanillin oak followed by smoked game, leather and rich brandied fruit cake. The tannin structure is tight and fine grained with an impressive acid backbone carrying the flavours well into the back palate and lingering on the finish well after the first sip.
This is an assertive wine and it calls for equally intense food matches like flame grilled Angus rib eye steak with green pepper gravy and roast potatoes. It will benefit from opening and decanting prior to serving. Over time it will develop a light sediment and should stand before pouring. Use large, wide bowled glassware for maximum bouquet and flavour.
This is a very powerful wine still in its youth. Three years oak maturation and cellar aging have prepared this wine for a long life. It will continue to develop in bottle for decades. Wines of this caliber will grow in complexity and be used at 21st, 30th and 40th birthday celebrations in future years. This is a very well made wine from premium Barossa fruit.
