Overview

This blend is mostly Cabernet Sauvignon with the remainder Merlot, Cabernet Franc and Petit Verdot. Two years in French oak and two years bottle maturation produce a classical wine of elegance with complex flavours and fine tannins, an excellent example of the Margaret River "Bordeaux" style.

Aroma/Palate

The wine has a complex bouquet and flavour of spice and berry fruits; the dry palate has exceptional length and softness. Ashbrook Estate has, for its 33 vintages, believed that the long maturation of red wines presents a stable wine that it is ready to drink at release date, but will reward further cellaring. The use of high quality French oak provides harmony, structure and style.

Cellaring Potential

The wine has considerable ageing potential as a result of the strong flavour, balance and fineness of the tannins. This wine is bottled under Stelvin screw cap to retain freshness and to promote long life.

Food Matching

The 2007 Cabernet Merlot would be an excellent wine to match with richer or fuller flavoured dishes including red meats, dishes with rich sauces and strong cheeses.

Grape Varietals

Ashbrook Estate’s classical claret style made from fully flavoured, ripe grapes consists of 67% Cabernet Sauvignon, 18% Merlot, 8% Cabernet Franc and 7% Petit Verdot to add complexity to the wine.

The typical Bordeaux blend is complemented with two years storage in French oak barriques, and at least a further two years bottle maturation in a temperature-controlled cellar.

In 1975, after considerable evaluation and thorough searching for land suitable for premium wine production, the Devitt family purchased and named Ashbrook Estate in Wilyabrup.

It is one of the ten original vineyard wineries in Margaret River and to this day is still owned and operated by the Devitts. With abundant technical expertise, a rare and highly sought after location, an ideal climate and a well equipped winery, Ashbrook has an enviable record for consistently producing high quality wines.

At Ashbrook the vines are mainly grown on specialised Lyre trellis to maximise flavour development. All fruit is hand picked. Ashbrook is one of the few wine producers where all fruit processed is estate grown and all wine is made and bottled on site using their own equipment. This gives greater focus and control over the total winemaking process.
