All grapes where whole bunch pressed to tank with full solids and without acidification. A small quantity from each parcel (10%) was transferred to old 500 litre puncheons, with the balance remaining in stainless steel vats. All ferments proceeded naturally and remained on their lees for 9 months prior to blending and bottling with a single filtration.

A low-crop year has produced a high intensity result. It boasts a particularly acute burst of grapefruit and smoke-like flavour through the finish; it's a simple affair of spice and pear to that point but then it launches and you'd swear, after you've swallowed, that the flavours echo like a gun shot.

Winery Tasting Notes
Very pale straw in colour.
Hay, bosc pears, tea cake, flint and light jasmine florals sit over a bed of citrus peel and green apple.
Straw, lemon and lime pith adding texture over pears and white flowers and bound by a tangy, saline line of acidity. Juicy and mouth-watering.
