Hand picked Chardonnay grapes are gently pressed and the juice is transferred to stainless steel tank. Fermentation is started immediately and this is kept cool to retain aromatics. Full juice solids are retained for fermentation to give richness and texture. Stabilisation and clarification is carried out quickly after fermentation in order to get the wine into bottle quickly to retain freshness and zest.

The vibrant freshness courtesy of early picking makes the use of oak redundant; instead the mix of stone fruit, citrus and passionfruit provides all the flavour needed for casual consumption. Rating 90 – Drink by 2017, James Halliday, Australian Wine Companion (SEPT/2014).
Winery Tasting Notes
Flinty with white apple, cantaloupe and lime aromas.
Rich fleshy palate exhibiting primary fruit characters of ripe citrus and honeydew also nuances of river stone and a crisp, refreshing finish.
This Chardonnay is ready to enjoy now but the structure and natural cool climate acidity should enable confident cellaring until 2018.
The wine is perfect with fish and chips.
