The focus for the winemakers of Thomas Mitchell Chardonnay is to preserve the fresh Chardonnay flavours through gentle pressing techniques and fermentation temperatures of between 10 and 14 degrees Celsius. Enhancement of the chardonnay flavours occurs through judicious oak usage which adds some of the vanilla, custard and spice flavours. The wine is matured in stainless steel to preserve the fresh lively chardonnay characteristics.

Winery Tasting Notes
Fresh melon and citrus with subtle floral perfume
Luscious flavours of fresh melon and peach with hints of almond and spicy oak.
The Chardonnay is predominantly sourced from Mitchelton’s established growers located in the Central Victorian temperate regions of the Goulburn Valley and Heathcote. A small parcel of fruit from the higher altitude Strathbogie ranges has been included to provide some citrus delicacy to compliment the opulent varietal flavours characteristic of the warmer vineyards.
