The concentrated and powerful Odyssey is selected from the most outstanding parcels of intense Cabernet fruit, from specific vineyard rows planted on rich clay terra rossa loams over a thick hard layer of limestone. After vinification in small batch fermenters, maturation takes place over approximately 36 to 40 months in a combination of new French and new American barriques. Some parcels are “double oaked” to increase flavour complexity.

Odyssey cabernet sauvignon is typically at the bigger end of the Coonawarra cabernet style spectrum. This 2008 release is the perfect case in point. It could easily pass as a beefy-but-dusty shiraz. It tastes of blackcurrant and beef stock, smoky-sawdusty oak and cloves. The fruit lacks a bit of definition but it sure packs a punch. Warm, spicy, brandied finish. Integrated tannin. Has been accorded the full Odyssey treatment, matured for 34 months in a mixture of French and American barriques, 70 percent new. Deep garnet colored with a hint of purple, the 2008 Odyssey Cabernet Sauvignon presents warm berry notes of crème de cassis and fruits of the forest compote with underlying hints of dried plums, Chinese five spice and cedar. Full bodied and with a generous amount of dried berry and spice flavors, it has a medium to high level of chewy tannins, refreshing acid and a long finish. Drink it not to 2020+. Dark plum reds with purple red tinges.
An intricately layered and complex array of oak maturationand ripe fruit aromas. Generous mocha and roast bean laced with sweet vanilla overlay ripe plum, subtle mulberry and dusty fruit.
A richly laden palate structure of oak and ripe fruit flavourssmoothly interwoven with extended oak maturation. Ripe dark berry fruits, hints of plum and dusty mulberry with subtle vanilla, mocha and chocolaty oak flavours are complemented with fine grained, softly assertive tannins.
Suggested cellaring is medium to long term,10-20 years.
