Pinot Noir is still a relatively new variety for the Orange region, but it is showing excellent promise in this cool, mountainous, continental climate. Fruit for The Wire Walker was hand picked and transferred to a conveyor belt for hand sorting. It was de-stemmed but not crushed; then transferred to open fermenters. Fermentation naturally evolved after three days. The cap was plunged once a day until fermentation was complete. The wine remained in open fermenters for about 18 days before being transferred into old French oak barrels (20% new), where it remained for 12 months.
