Sauvignon Blanc from the cool region of Pemberton was harvested at optimum ripeness, crushed, de-stemmed, must chilled and de-juiced. The juice was allowed to cold settle for 36 hours and subsequently racked off, upon which an aromatic yeast was introduced for fermentation. The ferment was halted early to aid in preserving the natural grape sugars and to add body and enhanced fruit character to the finished wine.

Shows the vast difference between Marlborough and WA sauvignon blanc; here grass, herb, lemon and green pea are the boundary riders, tropical fruits the heart, pumping those fruit flavours through the mid-palate and finish of an elegantly complex wine. Rating 93 – Drink by 2018, James Halliday, Australian Wine Companion (JAN/2014)
