Harvested at optimum ripeness, crushed, de-stemmed, must chilled and de-juiced. The juice was allowed to cold settle for 36 hours and subsequently racked off, upon which an aromatic yeast was introduced for fermentation. The ferment was halted early to aid in preserving the natural grape sugars and to add body and enhanced fruit character to the finished wine.
Pale straw-green; a well-made, light to medium-bodied commercial chardonnay with stone fruits and citrus making equal contributions to the gently fruity flavours. Rating 87 – Drink by 2017, James Halliday, Australian Wine Companion (MAR/2014)
Aroma
Chardonnay from the cool south west of Western Australia can stand alone with its lifted tropical fruit aromas of pineapple, peach, apple, and melon.
Palate
Clean, fresh palate displaying citrus and stone fruit characters. The texture and depth are typical of a cool climate West Australian Chardonnay and follows on with a long and crisp finish.
Food Matching
Pan-fried baby snapper, baked eggplant with tomato and basil. Also good with mild cheddars such as Caerphilly and Wensleydale, mild Gouda and Edam.
Capel Vale was established in 1974 by Sydney radiologist Dr Peter Pratten and his wife Elizabeth when they purchased land on the Capel River between Bunbury and Busselton in Western Australia’s South-West.
The site was originally a stone fruit orchard and its rich red alluvial loam soils over limestone made it a perfect viticultural site. It is also the location for the winery, cellar door and award winning restaurant.
After several vintages, it became apparent to Peter Pratten that the soils of the Capel area (now recognised as the Geographe region) were best suited to Chardonnay and Merlot. It became Peter's passion to determine the best region in South Western Australia for each premium grape variety. As a result Capel Vale has invested in prime viticultural land in Mount Barker for the production of Shiraz and Riesling, in Pemberton for Pinot Noir and Sauvignon Blanc and in Margaret River for Chardonnay and Cabernet Sauvignon.
