The wine was made with a responsive winemaking approach to preserve fruit purity. Fermentation in Potter (static) and open fermenters, with gentle extraction of flavours and texture through pumping over twice a day and hand plunging. Ferment lasted around 7-10 days. The skins were then pressed and wine allowed to settle before being transferred to barrel for 12 months.

The brilliance of the purple-crimson colour is a repetitive theme in the ’12 vintage, as is the sheer brightness and vibrancy of the fruit flavours; here black cherry, blackberry and a well of spices, garden herbs and fresh-turned garden earth are all on parade, tannins and oak also discreetly doing their thing Rating 95 - James Halliday, Australian Wine Companion 2015
"Clare Valley shiraz doesnt get the accolades it deserves - riesling seems to get all the glory. Flavours and aromas of plums, meat, blackberry, cherry, chocolate, liquorice and spice are complex but familiar, rather than challenging. Whats impressive about this is the way it flows through the mouth. Its silky, with energetic acid thats bright and a good match for the rich, dense flavours. Firm, grippy tannins and good length. " 4 Stars - Ben Thomas, The Weekley Review (18/SEP/2013)
"Opens with a surging mix of cherries and spicy plum aromas with a splash of spices and some savoury elements lurking in the background. The palate is tightly woven showing good fruit intensity and power through to the finish. Lovely structure here. Get a few to keep in the cellar. Winery Tasting Notes
The 2012 Knappstein Shiraz displays typical Clare Valley style and texture.
The perfumed nose reveals an array of red cherries and purple fruit mixed with exotic spices and a touch of forest floor earthiness.
Vibrant red berries, blackberries and spices layer the palate. The texture is lithe and firm with fine-grained tannins providing a backbone for the flavours to wrap themselves around. A wine of lifted vibrancy and tremendous persistence.
This wine will reward ageing for up to 8 years.
