The fruit for this wine was machine harvested during the cool of night, March 2011. After crushing the must was inoculated with a Bordeaux Red strain of yeast and fermentation proceeded at an even pace for two weeks until dryness. The wine was then drained and pressed. After MLF the wine was matured for 3 months in contact with effectively 20% new French oak, before blending and bottling.

95% Cabernet Sauvignon, 4.5% Merlot, 0.5% Shiraz
Dark cherry red with a magenta hue
Rich blackberry and plum on the nose with hints of nutmeg and vanilla spices.
A complex blend of the blackberries and plums evident on the nose, melding with notes of stewed rhubarb and cedar. Smooth, yet firm tannins add great length to the finish. Well balanced nuances of new French Oak, but the fruit is definitely the driver of this style. Medium term cellaring will only add to the complexity.
