The 2011 Bridgwater Mill Sauvignon Blanc displays gorgeous fruit intensity, with fresh exotic fruits, a lovely crisp herbal edge and a delicate, racy acidity.
Tropical fruits combined with lovely texture and a crisp mineral dryness signal the 2011 as a wine drinking beautifully now, showing the regional traits for which Adelaide Hills wines are renowned.
An unusually wet and warm year in the cool climate Adelaide Hills saw the Bridgewater Mill Sauvignon Blanc return to the regional blend of old, with small parcel of Clare Valley and Coonawarra fruit balancing the Adelaide Hills predominant blend.
A selection of aromatic enhancing yeasts and strict temperature control were used to intensify the fruit flavours in the stainless steel fermenters, which can be seen in the fresh yet complex offerings of the wines’ nose.
A small parcel of juice was fermented in one year old French barriques with regular lees stirring at the completion of fermentation which imparts a subtle creaminess to the palate and a lovely smooth finish.
The separate components were then blended together and gently filtered prior to bottling in September 2011.
