This wine is deliberately made to be a very Sauvignon Blanc dominant style. The Semillon acts in support giving some weight and consistency to the style but it is the more lifted and aromatic qualities of the Sauvignon Blanc that we want to see in this wine. The majority of fruit in this wine was sourced from our Margaret River Estate Vineyard. For the second year, we have also sourced small parcels of fruit from exceptional vineyards, to complement our fruit and add complexity to the finished wine. All parcels were machine-harvested in the cool of night during February 2015. After 3hours of skin contact, the must was pressed, with only the free-run juice utilised for fermentation. Low solids and cool ferment temperatures ensured the fruit characters were preserved to their utmost in the resultant wine.

Winery Tasting Notes
COLOUR:Pale lemon with a lime hue.
NOSE:Grassy lift up front, with passionfruit, blackcurrant bud and candied lime.
PALATE:This wine has always been a beacon when it comes to mouthfeel and texture. This year is no exception. The palate is intense and has a crisp minerality to it. The passionfruit, lime and blackcurrant bud from the nose are prevalent, however give this wine some air and it will open up to complex meld of flavours. Think quince paste, spice, vanilla and floral notes, granny smith apples and gooseberries. The finish is crisp, with wonderful length. Serve chilled, and drink whilst young.
