T'Gallant is a rustic elegant winery, nestled in the vine-slashed hills of the Mornington Peninsula, where Kevin McCarthy realised his vision for creating Pinot Grigio influenced by the cool maritime climate. His understanding of the suitability of the Mornington Peninsula to support strong and productive grapevines created a flourishing region. And sophisticated and complex wines.
The Cellar Door is rich with the history of Kevin's winemaking. The ambient revamped shed has represented extraordinary T'Gallant wine for 15 years, showcasing the evolving repertoire for which T'Gallant - and Kevin McCarthy - are renowned.
Kevin McCarthy was the first in Australia to make premium Pinot Grigio and Pinot Gris. Kevin's philosophy as a winemaker dramatically evolved when he arrived on the Mornington Peninsula in the late 80s. He directed his focus on viticulture, knowing this was the key to making the greatest wine.
Kevin contracted out many vignerons to grow Pinot Gris on the Mornington Peninsula as well as provided the management company that would harmoniously produce the superior vintages he desired.
T'Gallant winemaking style is expressive. Natural warm fermentations ensure gossamer-like yeast aroma. Each wine is assessed regularly on its journey to the bottle. Reductive characters are blown off with air. Gentle fining when required uses natural proteins found in isinglass and egg white. Blends of vineyards occur after fermentation; however the knowledge of a vineyard's destiny has occurred many years before.
