Winemaking Notes
The Target Gully Riesling is a style crafted to balance residual sugar in perfect harmony with the wine’s natural acidity. The fruit benefited from the warm summer and autumn of 2010, arriving in perfect condition at the winery. The fruit was hand harvested on the 3rd and 5th of May and carefully processed through the winery – the juice was cold settled for 10 days prior to racking for fermentation to help enhance palate weight further. The wine was fermented cool in stainless steel to retain maximum varietal expression. The fermentation was stopped by chilling to balance the natural acidity with residual sugar.
Mt Difficulty is a boutique winery located in Bannockburn, Central Otago, New Zealand. The Bannockburn area is internationally recognised as one of the few places in the world where the pernickety Pinot Noir variety has found a home outside Burgundy.
The unique microclimate of the Bannockburn area provides hot summers, a large diurnal temperature variation and long cool autumns, which brings out the best of Pinot Noir grapes. This, along with a mix of clays and gravels ideal for viticulture, provides an excellent basis not only for Pinot Noir but also for Pinot Gris, Riesling, Sauvignon Blanc and Chardonnay.
