Ayala Blanc de Blancs is made exclusively with Grands Crus Chardonnays : Le Mesnil sur Oger 50%, Cramant 25%, Chouilly 25%. These 3 villages are rated 100% on the “échelle des crus” scale.

The wine is aged 5 years in Ayala's cellars before disgorgement in order to develop complexity, intensity and roundness.

Pale gold in colour with a lively glint, its mousse is superb and displays very fine and distinguished necklaces of bubbles.


The nose displays very charming notes of citrus, pineapple and white flowers.


The palate is very fresh and pure, intense and beautifully structured, with a creamy texture, all leading to a pleasant and long finish. A very grand and elegant wine combining character and delicacy.

Food Matching

Very seductive as an aperitif, it is equally divine with St Jacques scallops, or a braised turbot with truffles or even with a crunchy dessert with aniseed pears.

Ayala was founded in 1860 and such was their success they were invited as a foundation member of the "Syndicat des Grandes Marques" in 1882, an organisation restricted to the leading Houses. With fruit from Grand and Premier Crus Ayala has offered consistent style and quality and was purchased by Bollinger in 2005.

Ayala shares the same quality imperiative as Bollinger with wines of a different style. In its December 2006 edition the prestigious and influential French magazine "La Revue du Vin de France" selected Ayala Brut Majeur as a "Grand Vin" and included it (together with Bollinger Special Cuvee) in their Top 5 champagnes that illustrated the different styles of champagnes - Ayala being selected as being both an aperitif as well as for the table.
