The Mornington Peninsula provides an ideal ambience for premium sparkling wine, with its proximity to the cold southern ocean ensuring a consistent and cool growing season, allowing the grapes to maintain their high natural acidity and develop a delicate array of aromatics and flavours.

Made in the traditional method, the wine is a blend of 75% Pinot Noir and 25% Chardonnay which were hand harvested then chilled before gentle pressing. Fermentation refines the fresh fruit character.

The wine is transferred to old barrels to age in lees before tirage the following summer. In bottle, it’s disgorged and released after two years on lees.

Pale gold/straw, with a fine, steady bead.


Lifted lemon rind and floral notes with some nice citrus brioche complexity.


The power, line and length of Chardonnay is the driving force on the palate, with a lovely crisp lemony zing. Some richer guava and apple flavours give some measured embellishment, together with a hint of creaminess from the nearly three years on yeast lees. The firm line is always there though leading into a long dry finish.
