The grapes were harvested in late March and Early April 2009, once a desired concentration was reached and berry shrivel had begun. All the grapes harvested were crushed to a bag press. The juice was drained and pressed from the skins to minimise excessive phenolic extraction and then settled to remove solids. The juice was then fermented slowly using selected aromatic yeast at cool temperatures to retain the very distinctive regional and varietal characters.
