Blanc de Blancs is a blend of three Grand Crus from the Côte des Blancs in which Le Mesnil-sur-Oger has the largest proportion, completed with wines from Cramant and Chouilly.
In great vintages these crus combine beautifully to deliver a very elegant, light, creamy and lively wine.

Some golden development in this Champagne's colour, and a toasty, honey and nougat nose - a complex and engaging wine. The palate has a fine, chalky texture and a lively citrus and peach flavour, finishing with bready autolysis flavour. Rating 93 & 2 Glasses, Nick Stock, Good Wine Guide 2011
5 Stars "Blanc de blanc styles are prized by Champagne lovers for their finesse and delicacy. Ayalas blanc de blanc is made exclusively from grand cru chardony. With lemon and grapefruit flavours and hints of toast and honey, the textures are crisp and zesty." Canberra Times, Fergus McGhie (Australia), 27 Feb 08
". . . Its superbly fine and dry - everything a blanc de blanc should be. A faint apple varietal character comes through, enhanced by a subtle breadiness. A superb aperitif." Winewise, Lester Jesberg (Australia), April 08
Winery Tasting Notes
Pale gold in colour with a lovely youthful glint, its mousse is superb and displays very fine and distinguished necklaces of bubbles.
The nose is expressive with notes of white fruits.
The palate is fresh and balanced despite the wine’s relative youth, leading to fresh and very pleasant finish. A very light and elegant cuvee which beautifully associates character and delicacy.
