Ayala Blanc de Blancs is made exclusively with Grands Crus Chardonnays : Le Mesnil sur Oger 50%, Cramant 25%, Chouilly 25%. These 3 villages are rated 100% on the “échelle des crus” scale.

Winery Tasting Notes
Pale gold in colour with a lovely youthful glint, its mousse is superb and displays very fine and distinguished necklaces of bubbles.
The nose is expressive with notes of white fruits.
The palate is fresh and balanced despite the wine’s relative youth, leading to fresh and very pleasant finish. A very light and elegant cuvee which beautifully associates character and delicacy.
Very seductive as an aperitif, it is equally divine with St Jacques scallops, or a braised turbot with truffles or even with a crunchy dessert with aniseed pears. Ayala Blanc de Blancs is a wonderful delight for Chardonnay wine lovers…
Ayala Blanc de Blancs is made exclusively with Grands Crus & Premiers Crus Chardonnays.The wine is aged 5 years in our cellars before disgorgement in order to develop complexity, intensity and roundness.
The beginning of the year was a little difficult because of very unstable weather and a lot of rain, particularly in July. September offered a wonderful weather as from the 7th: the Indian summer allowed an exceptional maturity for the grapes. This harvest was average in volume, but the quality of the fruit was excellent.
